Last week I told you of my fingers that had fused into some bizarre appliqué pose due to all of the sewing on of dots that I had been doing. This week I have only this to show you....
Isn’t beautiful??? Don’t you just want to sit down right now and get cutting???? This is all tongue in cheek by the way ... I do realise that I am just showing you what I should have been put in the bin long ago, however, I have nothing else that I can show you ... just that pile of scraps and this pile of paper ...
Oh and a referral to the Orthopaedic Surgeon ... as I have brought on Carpel Tunnels! I'm only kidding of course!
So what do I do to keep you all coming back while I am heavily bogged down in all of this secret Don’t Look Now business??? How about something to cook for tea tonight???? With our weather taking a definite turn for the better why not cook this yummy salad for you and yours and sit out on your veranda and enjoy the evening before it gets too hot and the mozzies hit us in a few weeks time J!
Thai Lamb Salad
600gm of lamb back strap
2 Lebanese cucumbers, halved, seeded and sliced
X 1 punnet of baby roma tomatoes halved
100gm of baby salad leaves
X 1 green & 1 red capsicum thinly sliced
¼ red onion thinly sliced
Dressing
¼ cup of lime juice (approximately 1 lime)
2 tbs kecap manis
2 tbs sweet chilli sauce
1 tbs of brown sugar
1 clove of crushed garlic
¼ tsp of chopped chilli
1. Spray pan with oil and heat to high. Cook lamb for approximately 5 minutes each side for medium or to your liking. Set aside and cover loosely allowing the meat to rest for 5 or so minutes.
2. Combine all of the remaining salad ingredients in a bowl and toss gently.
3. Place all of the dressing ingredients in a jar, replace the lid and shake well.
4. Slice the lamb thinly. Add the lamb to the salad, drizzle with the dressing and toss.
(this recipe was inspired by a beef salad that I found in Woman's Day Everyday Food, issue 1)
All of my little people love this meal except for Joshua who calls it the “yucky meal!!!!!” ... well you can’t please them all!

I have decided that I will put together a pattern and tutorial for these and if all goes to plan ... which of course little does ... you will find them here after next weekend. So if you have asked about these head back here then!
It is my littlest boys birthday next weekend and I have done very little for this party yet so I had best go get my skates on!

Looks like you have been busy - as always. Your salad looks yummy but I have no idea what kecap manis is? The weather here is horrendous , we have had torrential rain since yesterday. Have a lovely weekend and enjoy your sun. Oh,nearly forgot - looking forward to your tutorial.

Kellie, we have been having the most beautiful, gentle, warm days! It is really Spring like. I cant help but feel better in this warm wash of blossom, & perfume.

Wow! Kellie, you have been a busy girl. I don't envy you at all. The salad look beautiful and my kids wouldn't like it either....

The meal looks lovely but I am not sure who would eat that in our home... maybe hubby :-)

Kellie those scraps and pieces of paper tell me that you probably have, or have had extremely sore hands from all that cutting, but the rward always seem to be worth the pain. My gosh you do have a lot of birthday's close together, you must be ready to breath a sigh of relief.

oooh yummy salad. I love the smell of cooking lamb- I used to get all the dinner ingredients together before an evening walk, and if we walked past a house where they were cooking lamb I'd want to change the menu!

Hope the kids are all feeling brighter in time for the school holidays! Very envious of your Spring weather - it is still cold, wet, and wintry over here. The thai beef salad looks so yummy. You must have very sore hands from cutting out so much. I cant wait for the pattern for the art smocks. I am thinking of making a few for my nephews and niece for Christmas pressies. They have so many toys that I get tired of trying to find something they dont have. An art smock and a book sounds much better.

Oh your poor fingies....and wrists....I'm sure the result is worth it.Thanks for the recipe...I love new recipes to try....smocks look great and a tutorial would be fab thanks.... It was sunny here too on the weekend(Adelaide)we've had rain, hail and gail force winds today...real wintery weather. hope it doesn't get to wet for you...
